Mexico's most popular tequila cocktail — far outselling the Margarita domestically — yet its origins are murky. One theory credits Don Javier Delgado Corona, owner of La Capilla in the town of Tequila, Jalisco, who has been mixing drinks there since the 1950s. The name means "dove" in Spanish. The drink's rise outside Mexico is closely tied to the availability of Jarritos or Squirt grapefruit soda, though fresh grapefruit juice with soda water makes a worthy substitute.
